1. Golden Turmeric Lentil Soup

  • 1 cup red lentils, rinsed
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 6 cups vegetable broth
  • Salt & pepper to taste
  • Fresh lemon juice & parsley to serve

Sauté onion, carrots, and celery in olive oil until soft. Add garlic and spices, cook 1 minute. Add lentils and broth. Simmer 25 minutes. Blend partially for a creamy texture. Finish with lemon juice and parsley.

2. Roasted Root Vegetable Medley

  • 2 sweet potatoes, cubed
  • 2 parsnips, sliced
  • 3 carrots, sliced
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt & pepper

Toss all vegetables with olive oil, thyme, salt, and pepper. Spread on a baking sheet and roast at 425°F (220°C) for 30-35 minutes, stirring halfway, until golden and tender. Serve as a side or over quinoa for a nourishing bowl.

3. Spiced Apple & Oat Breakfast Bake

  • 2 cups rolled oats
  • 2 apples, diced
  • 1/2 cup walnuts, chopped
  • 2 cups almond milk
  • 1/4 cup maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp vanilla extract
  • Pinch of salt

Mix all ingredients in a bowl. Pour into a greased baking dish. Bake at 350°F (175°C) for 35-40 minutes until set and golden. Enjoy warm with a dollop of yogurt.
